Spike's 5 Napkin - Burger with dairy fresh cheese, applewood bacon, fried egg on brioche bun
This burger joint was opened by Spike Mendelsohn, the be-hatted, outspoken contestant from Season 4 of Top Chef. The first time I ate this burger, I thought it was one of the best burgers I’d ever eaten. The textures of all the components were like a party in my mouth, and the sweet-salty balance was perfect – the soft, slightly sweet brioche bun complemented the salty, smoky bacon and the fried egg. The Village Fries, with rosemary, thyme, and cracked pepper, were tasty on their own but became doubly delicious when dipped in a variety of mayo-based sauces with flavors like mango, chipotle, sriracha, and old bay seasoning.
